115g (4 oz) self raising flour
½ tsp cinnamon
15g (½ oz) caster sugar
2 tbsp mincemeat
125ml (¼ pint) milk

1. Place the flour, cinnamon and sugar in a basin; make a well in the centre.
2. Add the egg and mincemeat together with half the milk, whisk together and thin to a dropping consistency with the remaining milk.
3. Wipe the Simmering Plate with a little oil on a piece of kitchen paper. Drop tablespoons of the mixture onto the Simmering Plate, when bubbles rise to the surface, turn over and cook the other side.
4. Keep warm on a plate covered with a piece of foil, or Bake-O-Glide, in the Warming or Simmering Oven.
